A number of forensic best practices guides exist out there. One of the most widely accepted is the CERT guidelines for intrusion recovery. While this list is not all-inclusive, it goes a long way in helping to provide the public with a real-world best practice guide. For more advanced assistance, you should check out the "Incident Response & Computer Forensics" book by Kevin Mandia, Chris Prosise, and Matt Pepe. The book goes way beyond any other text or paper I have seen, and it is a staple on my bookshelf.
